As soon as you approach the valley you can smell it – Roquefort cheese, this is where it's been made for centuries. It's left to mature in the caves for several months; the caves are really natural tunnels in the rock so the wind blows through and keeps the air fresh, carrying the scent of the cheese with it. Apart from the cheese, there's nothing notable about Roquefort, this is just another spectacularly beautiful Cevennes valley.
